Spicy Avocado Margarita

I love a good margarita but I also find a good margarita hard to find. They’re either too sweet, too sour or too weak. Balance is super important in a margarita so I’m alway impressed when I find one with the perfect balance.

This margarita was inspired by a drink I had on a weekend getaway with my husband. Ok, truth be told, I had a few of them. They were all good. It was the perfect balance of sweet, spicy, and tart and had just the right kick from the tequila. After it became my signature drink all weekend, I knew I had to recreate it.

I know that avocado may sound strange in a cocktail, but it gives it just the right balance of flavor and creaminess plus, it makes the drink 100% healthy since it’s technically a green juice… or that’s what I tell myself. This drink pairs perfectly with my avocado lovers menu - Pork Tacos with Mango Avocado Salsa and my Guacamole. Enjoy!

Recipe

Serves 4

Ingredients:

1/2 cup fresh squeezed lime juice

1/2 cup jalapeño simple syrup**

1 cup tequila

1 cup ice

1 Avocado

** To make the simple syrup combine 1 cup of water, 1 cup sugar and 2 jalapeños, chopped in a small sauce pan and bring to a boil. Stir to combine and disolve sugar. Remove from heat and let cool. Once cool pour liquid and jalapeños in jar and store in fridge to chill. This is good in the fridge for up to 6 weeks.

To Make:

In a blender, combine all ingredients. Blend until smooth.

Fill cocktail glasses with ice and pour over ice. Serve and enjoy!
