Citrus Pork Tacos with Mango Avocado Salsa

Let’s talk tacos. I’m pretty much always in the mood for tacos. I find them to be satisfying no matter the mood I’m in. You can literally take any of your favorite meals and turn them into tacos, what’s not to love about that?! Another thing to love about tacos? People can build their own. Let your guests have the control of what they want so you make everyone happy. Put out all kinds of toppings and create a taco bar. However you want to present it, your guests will be salivating.

Now let’s talk THESE tacos. These tacos hit every tastebud. Savory and rich from the pork - citrusy, fruity, and spicy from the salsa. These tacos are somehow light while being hearty and oh so satisfying all at the same time. And staying on brand, these tacos are easy to prepare and the salsa can be made the day ahead so that you are not laboring all day before guests come over. This is the perfect meal for hosting because it is DELICIOUS and very little cleanup. You can’t find something better than that. I have said it again and I will continue to stress this, in order to enjoy hosting you MUST be a guest at your own party.

Recipe

Serves 4-6

Ingredients:

3-4 pound pork shoulder

2 Tbsp olive oil

2 Tbsp coarse sea salt

1 tsp ground black pepper

1/2 cup fresh squeezed orange juice (2-3 oranges)

1/3 cup fresh squeezed lime juice + 1 Tbsp lime (4-5 limes)

2 Tbsp honey

8 taco size tortillas (corn, flour, your choice)

3 avocados

2 mangos

1/4 large red onion, finely chopped

1/2 jalapeño, chopped

To make pork:

Cut pork shoulder into 4-5 large pieces. Season with half the salt and pepper.

In an instant pot, turn to sauté and add olive oil. Once hot add the pork, a few pieces at the time so you have enough space for them to brown..

Flip to brown all sides. Continue with the remaining pieces.

Once finished browning, add all pork back to instant pot.

Add orange juice, 1/3 cup lime juice, honey and remaining salt and pepper.

Secure instant pot lid and set to high pressure for 90 minutes.

Once finished, switch pressure valve to quick release. Make sure all pressure has been released before opening.

Shred pork in pot with forks. Remove from juices and place in serving dish.

To make the salsa:

Peel and dice the mango into bite sized chunks.

Cut avocado in half and remove the pit. Cut avocado into bite size pieces and spoon out of skin.

In a small bowl, add mango, jalapeño, avocado, and 1 Tbsp lime juice. Stir to combine.

Serve in a bowl alongside the pork and warm tortillas.
