Truffle Honey Spritz

Here’s the deal, you probably think that a truffle cocktail sounds weird and I would have to agree with you. I have always had truffle in it’s savory form besides truffle honey, and even then I would pair it with a charcuterie board to bring out the earthy flavor of the truffle. I first realized how good truffle could be in a sweet dish when my husband and I went to Napa recently. While we were there we went to dinner at this place called Torc which, by the way, is absolutely phenomenal and if you are in Napa I highly recommend it. Anyways, they had a truffle menu so, of course, we had to partake. We finished the meal with a caramel tart which they shaved fresh white truffle on top of. Sounds strange, right. Until you take a bite. OH MY GOODNESS. It was SO GOOD! Anyways, it got me thinking about truffle in a different way. Enter the Truffle Honey Spritz.

This cocktail is full of flavor and has the slight undertone of truffle. I will say, even though it is mild, you definitely will notice it so if you don’t like truffle, you can use regular honey instead. However, I highly encourage you giving this a try. Either way, this cocktail is so much fun. And as with most of my drinks, you can make it in a pitcher so guests can serve themselves and you, the amazing host, can truly enjoy yourself and be a guest at your own party. Pair this cocktail with my Truffle Cream Pizza and Asparagus with Prosciutto Breadcrumbs and you have a truffle lovers dream meal.

Recipe

Ingredients:

1/4 cup fresh squeezed lemon juice

3/4 cup pear juice

3/4 cup vodka

2 tsp truffle honey

1 bottle Prosecco

To make:

Pour lemon juice, pear juice, vodka and truffle honey in a large pitcher. Stir well to combine and dissolve the honey.

Pour full bottle of Prosecco in same pitcher. Stir one more time.

Serve chilled in glass of choice.
