Truffle Cream Pizza

Truffle is one of those ingredients that people have a pretty strong opinion on. I find people either love it or hate it, there isn’t much of a crowd that sits in between. Obviously, I sit on the “love” side. As does my husband and most of my friends, so I can safely throw together a truffle menu and know everyone will be happy.

Now this pizza, THIS PIZZA is what dreams are made of. Honestly, even if you don’t like truffle this is SO good. Just omit the truffle oil or cut it in half for a hint of truffle. Regardless the cream sauce is something you can literally put on anything and it will taste infinitely better. It’s that good.

This recipe is inspired by one of my favorite pizza places in LA, Pizzana. A couple months back, I went to dinner there with a friend of mine and we ordered this truffle pizza. The price tag was high but it sounded absolutely irresistible so we decided to get it. It was so unbelievably flavorful it was insane. Like seriously, one of the best pizza’s I’ve ever ate. So, naturally, I had to remake it at home for my husband and I to enjoy. I am so happy I did because it turned out so, so good. If you are looking for a simple pizza that will impress anyone. This is it.

Recipe

Ingredients:

2 store bought or homemade pizza dough

1 shallot, finely chopped

1 Tbsp extra virgin olive oil

1 pint heavy cream

3 cups finely grated parmesan cheese

2 tsp white truffle oil

1/2 cup corn meal

16 oz fresh mozzarella

To make:

Important: Preheat oven and pizza stone for 1 hour at 500" degrees. You want that stone HOT! If you don’t have a pizza stone preheat a baking sheet for 20 minutes at 500 degrees.

While the oven is heating, tear the mozzarella into bite sized chunks and store in the fridge until you are ready to use.

In a large saute pan heat olive oil on medium heat.

Once hot add the chopped shallot and cook until tender, about 2-3 minutes

Turn heat to medium low and add the heavy cream.

Simmer cream for about 5 minutes to thicken.

Remove from heat and add parmesan cheese. Stir to melt and fully combine.

Stir in truffle oil.

Salt and Pepper to taste.

Set cream sauce aside and prepare pizza dough.

To assemble the pizza add a good amount of cornmeal to the pizza peel so the dough does not stick. 1/2 cup should be enough. Pull the pizza dough to the desired size and thickness, then put on top of the cornmeal.

Generously spread 1/2 the sauce on the pizza dough. Top sauce with 1/2 torn mozzarella. This is enough sauce and cheese for 2 pizzas.

Slide the pizza off of the peel and onto the stone that is in the oven. If you have enough cornmeal it should slide off easily.

This pizza only takes about 5-7 minutes to cook. Keep an eye on it so it doesn’t burn. As soon as the cheese is bubbling and crust golden, the pizza is ready.

Use the same pizza peel to take the pizza off the stone and out of the oven. A little tip, put tin foil on the rack below the stone so you don’t make a mess of your oven with the cornmeal.

Let pizza cool for 5 minutes, cut and serve.
