Guacamole
Guacamole seems simple enough, right? Right. It’s a super simple snack, side, appetizer to make. However, sometimes things that are so simple are also so hard to get right. When it comes to good, simple dishes, they are usually made with the quality of ingredients. Guacamole is one of those things. If you have ever been to a Mexican restaurant that makes table side guacamole, you probably notice a significant difference in taste. That is because it is FRESH. Made with ingredients that the restaurant feels good enough about for you to see.
This is a perfect dish to shop for at your local farmers market. Of course, you can get all the ingredients at your local store, but I am always looking for an excuse to go to a farmers market. This recipe is simple, clean and oh so good. And who doesn’t love a good dip. For a crowd pleasing meal, pair this recipe with my Pork Tacos with Avocado Mango Salsa. Enjoy!
Recipe
Serves 4-6
Ingredients:
6 large avocados
1/2 large red onion finely chopped
3 Tbsp chopped cilantro
2 jalapeños chopped, remove seeds for a medium spice
1/4 tsp garlic powder
1 lime, juiced
Salt and Pepper to taste
To Make:
Cut avocados in half and remove pit. In a large bowl, spoon out avocado and roughly mash.
Add all other ingredients and stir/mash to combine.
Serve with chips, veggies, or whatever dipper you’d like.
