Snap Pea Salsa
I pretty much love all dips. Whether they’re more of a scoop-able dip, or a saucy cheesy dip, I want it. It’s the perfect appetizer for literally any event. So, I’m always up for another dip to add to my rotation. Sometimes I want something comforting, warm, and truly a guilty pleasure, and other times I want something light and crisp. This dip was born out of clearing out my fridge. I was going over to a friends house for dinner and I told her I’d bring an appetizer and this is what I came up with. Everyone loved it so I thought I’d actually make it into a recipe. The snap peas give it a sweet crunch, the parmesan gives it a bit of nuttiness, and the lemon gives it the brightness you want for summer. Honestly, it’s very unexpected and very good! I recommend serving it with pita chips but any chip will do. Don’t get me started on my love for chips ;)

This recipe takes no time to make but you can make it the day before if you just want to save some time.

Recipe
Serves 4-6
Ingredients:
8oz sugar snap peas, roughly chopped
1 jalapeño, finely chopped
1 garlic clove, finely chopped
1/4 cup grated parmesan cheese
Juice from 1 lemon
2 Tbsp fresh basil, chopped
Salt and Pepper to taste
Directions:
Add all ingredients to a large mixing bowl and stir to combine.
Serve with your favorite chips
