One Pot Lemon Mascarpone Pasta Bake
I’m sure you can agree that there’s nothing better than a one pot meal. Especially on a weeknight or just after a busy day. One pot meals are easy and the best part is, there’s one dish to clean up! Honestly, what’s better than that! This recipe checks all the boxes. 5 minute prep time and literally made in 1 dish. This pasta is the perfect dish for an easy weeknight dinner or even a dinner party and with the freshness of lemon, it’s perfect for Spring or Summer.

Recipe
Serves 4-6
Ingredients:
For the crust
1 pound dried tagliatelle pasta
4 Tbsp unsalted butter, melted
8oz mascarpone cheese (I prefer Vermont Creamery)
1/4 cup grated parmesan cheese
1 tsp lemon zest
1/2 lemon, quartered and seeds removed
2 cups whole milk
2 cups water
1 tsp salt
1/4 tsp ground pepper
Directions:
Pre-heat oven to 375 degrees.
Add melted butter to a 9x13” baking dish. Swirl butter around to coat bottom and sides of dish.
Add dried pasta to the dish.
Wedge lemon in dish, around the pasta.
Next, add mascarpone cheese, 1 spoonful at a time, over the pasta.
Sprinkle parmesan cheese over top, followed by lemon zest, salt, and pepper.
Pour milk and water over top of pasta.
Bake in the over 30-40 minutes, until bubbly around the sides and aldente.
Serve warm and enjoy!
