Pimento Cheese and Bacon Burger

Cheeseburgers are at the top of “my favorite things” list. If there’s a burger on the menu, I’m ordering it. In fact, when I travel for work, I research the best burger in the city where I’m going so I can check it out. Some may think that’s crazy but I think it’s completely rational!

There are obviously so many way to have a burger but it seems the majority of the time it’s topped with some sort of melty cheese and carmelized onions which is always a good option but sometimes it’s fun to switch it up.

Gooey, slightly melted pimento cheese on top of a perfectly seasoned patty and finished with bacon and avocado on top is truly a delicious combination. If you’re looking for a crowd pleasing burger or just a delicious meal to enjoy alone, this is it!

Recipe

Ingredients:

Burgers:

4 Brioche or potato hamburger buns

1 lb ground beef

1/2 tsp brown sugar

1/2 tsp paprika

1/2 tsp chili powder

1/8 tsp chipotle powder

1/4 tsp garlic powder

1/2 tsp ground cumin

1/2 tsp coarse salt

1/8 tsp black pepper

6 slices bacon, cooked

2 avocados

1 tomato, sliced (optional)

Pimento Cheese:

8 oz room temperature cream cheese

1/4 cup mayonnaise

2 4 oz jars of pimento peppers, chopped

1 jalapeno, finely chopped

2 cups thick shredded sharp cheddar

2 cups fine shredded medium cheddar

1/2 tsp cayenne pepper

To make:

Pimento Cheese:

Add cream cheese and mayonnaise to a large bowl and stir to combine.

Add cheese, peppers, and cayenne into cream cheese mixture and fold in until combined.

Transfer to air tight container and store in the frigde.

**You can make the pimento cheese up to 5 days before. It is best if you let the flavors marinade for at least a few hours before serving.

Burgers:

Combine ground beef, brown sugar, paprika, chili powder, chipotle powder, garlic powder, cumin, salt and pepper. Divide into 4 sections and form into 4 hamburger patties.

Cook hamburgers to your preference.

Top patties with pimento cheese while still on the stove or grill to slightly melt the cheese.

Place patties on hamburger buns and top with bacon, avocado, tomato, and any other topping your prefer.
