“Chubby Hubby” Icebox Cake

To be honest I’m not a big ice cream person. If we’re talking desserts, ice cream is going to be my last choice. However, my husband and kids love it so we always have it in our house. A few weeks ago, my husband made himself an ice cream “sundae” with vanilla ice cream, chocolate hazelnut spread, and graham crackers. I tried one bite and then ate half of it when he wasn’t looking. It was so good! And so simple. So it got me thinking… what can I do to take those flavors to the next level? In my mind, the only thing that was missing was peanut butter. Peanut butter and chocolate are a match made in heaven so obviously that’s what was missing.

As I said, ice cream is not my dessert of choice but if I’m going to eat it, it’s going to be Ben and Jerry’s Chubby Hubby. So, I decided to take my husbands dessert and combine it with my favorite ice cream flavors to make the most delicious icebox cake.

Recipe

Ingredients:

2 cups pretzels

8 sheets graham crackers

4 Tbsp melted butter

13oz dark chocolate hazelnut spread

1 cup creamy peanut butter

1.5 qt vanilla ice cream, softened

To make:

Line 8” square baking dish with parchment paper.

Add pretzels and graham crackers to a ziplock bag and crush with rolling pin, meat mallet, or whatever you have on hand.

Melt 4 Tbsp butter in medium bowl. Add pretzel mixture to bowl and mix to coat with melted butter

Place 1/3 of pretzel mixture at the bottom of the baking dish, spread to cover the bottom.

Spoon 1/2 of the ice cream on top of the pretzel mixture and spread to cover the pretzels.

Spoon 1/3 of the dark chocolate spread on top of the ice cream and spread.

Spoon 1/3 of peanut butter mixture on top of chocolate and spread.

Repeat steps starting with pretzel mixture until done.

Cover with plastic wrap and place in the freezer to set for at least 2 hours.

Cut into squares and enjoy!
