Pineapple Margarita with a Hot Sugar Rim

I’m guessing by now you’re learning that tequila is my go to spirit in the summer time. I just love all the flavor combinations it pairs so well with, the options are endless! It doesn’t hurt that I feel like I’m transported to a tropical when I’m drinking it.

This margarita is perfect to make in bulk because people can customize it. If you have a crowd that prefers a salted rim, you can mix the cayenne with salt. And for those that don’t like spice, they can do just a regular sugar or salted rim or, no rim at all. Also, if some prefer their margaritas on the lighter side, top it with soda water. Like I said, the options are endless!

Recipe: serves 2

Ingredients:

3/4 cup chopped fresh pineapple

1/2 cup tequila blanco

1/4 cup lime juice

1/4 cup orange liquor

1 Tbsp granulated sugar

1/4-1/2 tsp cayenne pepper depending on spice preference

To make:

On a plate, combine sugar and cayenne pepper.

Using a lime wedge, rim 2 glasses with lime juice and dip the rim in the sugar mixture. Set glasses aside.

In a blender, combine pineapple, tequila, lime juice, and orange liquor and blend until smooth.

Fill sugar rimmed glasses with ice and fill with margarita.
