One Pot Pea and Goat Cheese Spaghetti with Spicy Bread Crumbs

I’d say it’s pretty obvious by now that I love all things carbs but pasta is at the top of my favorite things. Pasta tends to be forgotten about during the summer since the heat doesn’t really call for comfort food and no one really wants to stand by a hot stove. However, pasta is a main food group (right??) so you gotta make sure you make room for it. That being said, the fact that this dish is a one pot wonder is what makes it perfect for summertime. Yes, it’s still cooked on the stove but it’s all in one pot and half of it is just letting the noodles absorb the the liquids. The bread crumbs do create a second pan to clean but they are so so good so I strongly encourage you dirtying an extra pan for them!

Recipe

Ingredients:

For the pasta -

2 Tbsp Olive Oil

2 garlic cloves, sliced

1 small shallot, finely chopped

4 cups chicken broth

1 cup white wine

1 lb uncooked spaghetti

1 tsp salt

1/4 cup lemon juice

1 cup grated parmesan cheese

5 oz goat cheese

1 1/2 cups Fresh or frozen peas

For the breadcrumbs -

2 cups day old bread, cubed

2 Tbsp Olive Oil

3 Tbsp butter

1/2 tsp chili flakes

1 tsp salt

To make:

Place a large sauce pot on the stove over medium-low heat.

Add olive oil, garlic, and shallot to the sauce pot and cook for 1-2 minutes until tender.

Add chicken stock, white wine, salt, and spaghetti to the sauce pot. Cover and bring to a boil.

Once boiling, cover and reduce to simmer and cook until pasta is aldente and liquid is almost absorbed - about 15 minutes.

While the pasta is cooking, make the bread crumbs. In a large skillet, heat olive oil and butter on medium heat.

Once melted, add the bread cubes and toss to coat with oil mixture. Sautee until golden brown and crispy then remove from heat.

Season breadcrumbs with salt and chili flakes and set aside.

Once pasta is cooked add lemon juice and parmesan cheese and stir to combine.

Add peas and goat cheese and stir to combined. If the sauce seems a bit dry, add 1/4 cup more of chicken stock.

Remove from heat and pour into a serving bowl. Top with bread crumbs and enjoy!
