Swiss Meringue S’more Crostini

Let me start by saying that this recipe appears more complicated than it is. The meringue is fairly easy and it just adds this elevated texture and flavor to a classic s’more. If you’re a s’more lover like me, you’re definitely gonna want to give this a try. The Swiss meringue is addictingly good. It’s so creamy and rich and tastes about a million times better than a marshmallow. And that’s saying a lot! Pair it with Nutella and this is a crowd pleaser that will leave everyone impressed and very satisfied!

Recipe: 8 servings

Ingredients:

2 egg whites

1/4 tsp salt

1 tsp vanilla extract

1/4 cup powder sugar

1/4 cup granulated sugar

1 loaf of ciabatta

8 Tbsp Nutella

3 Tbsp butter

To make:

*The best way to make Swiss meringue is by using a double boiler which is very simple.

Place 2-3 cups of water in a medium sauce pan and place on stove over high heat to bring water to a boil.

While water is heating, add egg whites, salt, vanilla extract, powder sugar, and granulated sugar to a glass mixing bowl. This glass mixing bowl should be a good size to sit on top of the sauce pan.

Once water is boiling turn down to a simmer. Place the glass mixing bowl over sauce pan. Make sure the water is not touching the bottom of the bowl. If it is, pour some water out.

Whisk continuously over the boiling water until mixture becomes thicker and a bit foamy, about 3-5 minutes. *Be careful not to over heat the egg mixture. If it’s getting to warm, move the bowl away from the sauce pan for 15 seconds or so and continue to whisk. Then return to heat.

Once mixture is creamy remove it from the heat.

Next you need to whisk it until it forms stiff peaks which is going to take about 10-15 minutes. The best way to do this is using a stand mixer but you can definitely use a hand held electric mixer as well. Either way, whisk on medium speed until the meringue is sticky, forming stiff peaks and has a bit of sheen to it. Once complete, set aside.

In a large fry pan, add butter and place on stove over medium heat.

Cut loaf of bread into slices about 1” thick.

Once butter is melted in pan, fry the bread up on both sides, creating a golden crust on the bread.

Remove from heat and let cool.

Once bread is cooled spread liberally with Nutella, about 1-2 Tbsp per slice

Spread meringue on top of Nutella and carmelize with a hand torch to give that roasted marshmallow look.

*If you don’t have a hand torch, you can broil it on high for 2-3 minutes. Just keep an eye on it because everyone’s broiler is different.

Serve warm and enjoy!
