Chipotle Pork White Queso
CHEESE! Anyone that knows me knows I LOVE CHEESE. This is not your average obsession with cheese. I truly could live off of cheese. I would need a few accompaniments such as wine, salami and bread and I would be set. Breakfast, lunch and dinner. My husband and I went to Milan and Rome for our honeymoon and my favorite thing about both the hotels was their "continental” breakfast which was cheese, baked goods, and cured meats. Seriously?! I could have sat there all day. I was truly in heaven. My love for cheese is definitely reflected in my cooking. There are very few recipes I make that don’t contain cheese in some shape or form. Queso is one of my favorite ways to have cheese. It’s creamy, cheesy, and dipable. It is simply the best! This queso is no exception. The pork is seasoned with a blend of spices and spiced up with chipotles in adobo and then added to a blend of white cheddar, white American cheese, and cream cheese. How could such a combination not be good?! It pairs perfectly with my Cauliflower Tacos by offering a cheesy and meaty dish to a vegetarian dish. It has something for everyone. I hope you enjoy!
Recipe
Ingredients:
1 pound ground pork
2 chipotles in adobo
1 tsp cumin
1 tsp dried oregano
1/2 tsp kosher salt
1 clove of garlic, finely chopped
1 1/2 cup shredded white cheddar
1 cup white American cheese cubed
8 oz cream cheese
1/4 cup milk
For the Pork:
Finely chop 2 chipotles in adobo sauce and set aside.
In a medium fry pan heat 1 tsp olive oil on medium heat, add the pork once hot.
Add the chopped chipotles along with the sauce, cumin, orgeno, chopped garlic and salt to the pork.
Break pork apart as it browns and combine with all seasonings with a wooden spoon for 5-7 minutes or until fully cooked.
Remove from heat and set pork aside
For the Queso
In a medium sauce pan add the milk and cream cheese. Turn on medium heat and stir until cream cheese has melted.
Add white cheddar and American cheese to sauce. Continue to stir until everything has melted and combined.
Remove from heat and add pork to cheese sauce, stir to combine.
Pour into an oven safe serving dish* and serve warm with tortilla chips and veggies.
*It’s best to serve this in an over safe dish because this queso needs to be warm. If the queso starts to cool, you can toss it in the oven for 5-10 minutes to warm it through again.
You could also make this the day before and store in an airtight container and then transfer to an oven safe dish and heat in the oven when you are ready for it.
