Cauliflower Tacos with Lime Refried Beans

Let’s talk cauliflower.

I love cauliflower. Bonus, so does my husband, which is a big deal since he’s not exactly a veggie lover. I’m always trying to incorporate more vegetables into our meals and I find that cauliflower is such an easy and tasty way to do that. I put it in oatmeal, use it to make pizza crust, buffalo bites, fried rice…the list goes on.

But, these tacos are one of my FAVORITE ways to use it. The cauliflower is perfectly seasoned so that it’s delicious and satisfying. Combined with healthy-ish black beans that taste rich and oh-so-guilty, this meal is a real winner.

I recommend serving this meal family style with all the fixings so everyone can build their own tacos. What are tacos without chips and queso? Not to worry, I have a queso recipe coming for that meat lover attending your dinner. I hope you enjoy!

Recipe

Ingredients:

Cauliflower Tacos

2 heads of cauliflower

2 tsp oregano

2 tsp paprika

1 tsp sea salt

2 tsp cumin

2 tsp brown sugar

1 tsp onion powder

1/2 tsp cayenne

5 Tbsp olive oil

Black Beans

1 can black beans

2 Tbsp butter

1 Tbsp lime juice

1/2 lime zested

Preheat Oven to 425 degrees

To make the cauliflower:

Chop Cauliflower and place on a baking sheet. Drizzle with olive oil.

Combine all spices in a bowl. Sprinkle full amount on to cauliflower and toss all ingredients together with your hands.

Put in the oven for about 20-25 minutes or until fork tender.

To make the black beans:

Melt the butter in a fry pan on medium-low heat.

Once the butter is melted add the can of drained black beans and the lime juice. Cook for 5 minutes and mash the beans with the back of a fork. You don’t need the beans to be fully mashed, just enough to give texture.

Remove from heat and add lime zest.

Serve with fresh lime, avocado and charred tortillas*

* To char the tortillas it is best done with a gas stove. Using tongs, set a tortilla directing on the grill over the burner, turn the burner on medium heat or high enough for the flames to hit the tortilla. Let char for about 5-10 seconds and then use tongs to flip. Char for another 5-10 seconds and remove. Repeat with as many tortillas as you need.

If you don’t have a gas stove just wrap the tortillas in a damp cloth and put in the microwave for 30 seconds to warm. The key is for the tortillas to be warm.
