Sweet and Spicy Boneless Buffalo Bites

Let’s talk buffalo wings. Buffalo wings are a staple for any football game but during the Super Bowl, they are a must have. That being said, they are also messy and while everyone loves them, they also don’t love trying to balance a plate and beer on their lap while licking their fingers clean. This is why I am a big fan of boneless wings. They give the same great flavor in a more manageable bite. These buffalo bites are made with chicken breasts and baked which makes them 100% healthy! Ok, maybe not 100% healthy since they are breaded in cheese but healthier than it’s deep fried cousin and definitely not as messy. Pair these with my Pimento Cheese Sliders with Fried Jalapeños and you are ready for your football festivities.

Are you thinking 2 recipes may not be enough for a Super Bowl party? Well I absolutely agree. I mean, the name of my blog is NO ONE LEAVES HUNGRY after all and I would have some serious fear about someone leaving hungry if I only provided 2 things to eat. That is probably the Italian in me. So, if you want to be the host with the most you can absolutely make more recipes. My Chipotle Pork White Queso would be perfect as would my Spicy Sausage and Honey Pizza. BUT… as I have said before, you should be a guest at your own party and should not run yourself ragged so, order a pizza, ask your guests to bring chips, dips, a vegetable tray, a dessert, basically just help yourself out a little bit. Everyone will love what is homemade and will totally appreciate what isn’t.

Recipe

Ingredients:

2 pounds boneless/skinless chicken breast or tenders

1 cup buttermilk

2 TBSP Hot Sauce

2 cups panic bread crumbs

2 cups finely shredded parmesan cheese

1 1/2 tsp salt

1 tsp ground black pepper

1 cup flour

1/4 tsp cayenne pepper

1/2 tsp garlic powder

4 eggs

1 cup buffalo sauce

1/4 cup honey

1/4 cup siracha

1 clove garlic, minced

3 Tbsp melted butter

To make the buffalo bites:

Preheat Oven to 425 degrees

Chop chicken into 2” pieces

Combine buttermilk and hot sauce in a ziplock bag and add chopped chicken. Let marinade in the fridge for 3 hours up to overnight.

Prep 3 bowls for breading:

In bowl #1 add flour, cayenne, garlic powder, 1/2 black pepper, and 1/2 tsp salt.

In bowl #2 crack 4 eggs and whisk.

In bowl #3 combine panko, grated parmesan, 1 tsp salt, and 1/2 tsp black pepper.

Place baking rack on baking sheet and spray with non-stick spray. If you don’t have a baking rack line the sheet with parchment paper and flip the chicken halfway through the cooking time.

Remove chicken from fridge and begin the dredging process. Remove chicken bites from buttermilk and lightly coat in flour mixture, then dip in the eggs, then cover in the breadcrumb mixture. Once fully coated set on baking rack. Continue this process with all the chicken bites.

Once complete bake for 10 minutes.

While chicken is baking make the buffalo sauce:

Melt butter in sauce pan. In a separate bowl combine buffalo sauce, honey, siracha, garlic, then add the butter. Stir to combine and set aside.

Once chicken is done remove from oven and let cool for 5 minutes.

Switch the oven to broil

Once cooled, carefully remove chicken from baking rack and add to sauce mixture.

Toss to coat and then place back on the baking rack.

Return to the oven for another 5 minutes to crisp, turning half way through.

Serve with celery and your favorite dipping sauce. These buffalo bites pair perfectly with my Pimento Cheese Sliders.
