5 Minute Creamy Brie Polenta
When I think about comfort food, that type of food that warms your body and should from the inside out, I almost always think pasta. A big bowl of pasta is so comforting to me. And it’s pasta, so of course it’s good for the soul. BUT, one other thing comes to mind when needing comfort… Polenta. Polenta is 100% an ultimate comfort food to me. It’s creamy, rich, and warm. Basically everything I look for in a comfort meal. Bonus! This recipe is ready in 5 minutes. It’s so easy which makes it perfect for a chilly weeknight dinner after a long day.

No joke, this takes 5 minutes to make. Ok, maybe a total of 10 if your counting the prep. Regardless, it’s super simple and is best fresh off the stove so cook this up right before you’re ready to serve.
Recipe:Serves 4-6
Ingredients:
1 9oz package of instant polenta (I prefer DeLallo Instant 3 minute polenta)
4 1/2 cup vegetable broth
1/4 cup whole milk
1/2 cup grated parmesan cheese
4 Tbsp butter
4 oz brie, cut into 1” chunks (based on preference, you may want to remove the rind)
Salt
Pepper
Directions:
In a large saute pan, bring broth to a low boil.
Once boiling, reduce heat to low and add polenta slowly, stirring constantly with a whisk. This will prevent clumps.
Once combined, slowly add milk and continue to whisk. The polenta will thicken quickly so as soon as it’s at your desired consistency remove from heat. If it gets too thick, add a little more milk, continuing to stir.
Stir in parmesan cheese.
Finally add butter and brie and fold into polenta.
Season with salt and pepper to taste.
Serve immediately and enjoy!
