Honey Chipotle Meatballs
I’ve been making a version of this recipe for years. It’s one of my husbands favorite things that I make which is a bonus for me because it’s super simple! Pair these meatballs with some creamy potatoes, polenta, or crusty bread and you have a crave worthy meal. The balance of sweet, spicy, and savory make these the perfect bites and the best way to warm up on a cold day.
Entertaining tips:
Make the sauce up to 3 days in advance and store in the refrigerator. When you’re ready to serve, re-heat on the stove and add the meatballs.
Recipe:Serves 4-6
Ingredients:
16 oz of pre-made meatballs (I use the frozen turkey meatballs from Trader Joes)
6 Tbsp butter
4 cloves of garlic, minced
6 Tbsp chili sauce
1/4 cup vegetable broth
2 Tbsp honey
2 chipotle peppers in adobo, finely chopped
1 tsp dried oregano
1 tsp dried basil
Salt and Pepper
Directions:
In a medium sauce pan, add butter and place over medium heat.
Once butter is melted, reduce heat to low and add garlic. Let garlic cook for 1-2 minutes, careful not to burn.
Next, add chili sauce, vegetable broth, honey, peppers, oregano, and basil.
Stir together and bring to a simmer.
Add meatballs and cover pan with a lid.
Allow to simmer on low for 20 minutes. Stirring every 5 minutes or so.
Add salt and pepper to your preference.
Remove from heat.
Serve warm and enjoy!
