Squid Ink Carbonara

Carbonara is my husbands favorite pasta dish. So, of course I needed to figure out how to master it and I must say, this recipe turned out pretty darn good. Squid ink actually has a fairly mild flavor but if you’re not a fan, just use regular pasta. However, it’s perfectly spooky for halloween.

Entertaining tips:

  1. I’m going to be honest with you, you can’t really do much ahead of time on this one. But, if you’re making homemade pasta, definitely do that the morning of.

Recipe:serves 4

Ingredients:

1 pound of homemade or store bought squid ink spaghetti

*Here’s my homemade pasta recipe, just add 1 tsp of squid ink to the pasta dough

8 oz chopped pancetta

4 eggs

2 cups grated parmesan cheese

1/4 tsp pepper

Directions:

  1. Heat a large pan over medium heat. Add pancetta and cook until crisp. Once done, turn off the heat.

  2. In a large pot, bring water to a boil. Once boiling, liberally salt the water and then add the pasta.

  3. While the pasta is cooking, crack eggs into medium bowl and beat the eggs well.

  4. Add grated parmesan cheese and pepper to eggs and whisk together for a minute or so to create a cream.

  5. Once pasta is done cooking transfer the pasta to the pan with pancetta with tongs or a slotted spoon. *Don’t drain the pasta water

  6. Add about 1/4 cup of pasta water to the egg mixture and whisk well as your adding the water so the eggs don’t scramble.

  7. Add another 1/4 of water to the pan with pancetta and pasta.

  8. Add the egg mixture to the pasta and toss the pasta with tongs to combine and coat the pasta. Keep tossing while mixture warms so the egg does not scramble.

  9. Serve immediately and enjoy!
