Spicy Cranberry and Persimmon Sparkling Margarita

You know I’ll never pass up a chance to make a margarita and this one is the perfect festive holiday cocktail. It’s slightly sweet, spicy, and bubbly, so pretty much the perfect cocktail!. I made a pitcher of this recently and it was enjoyed ‘til the last drop!

Entertaining tips:

  1. Make the cranberry persimmon juice up to 5 days ahead and store in the refrigerator.

  2. Serve this in a large pitcher or drink dispenser and set glasses and ice bowl right next to it so people can help themselves.

Recipe:serves 4

INGREDIENTS:

For the cranberry juice:

6 cups of water

10 oz fresh or frozen cranberries

3 persimmons, quartered.

1 jalapeno, sliced in half

1 cup sugar

For the cocktail:

Singer serve:

2 oz cranberry juice

1 oz lime juice

2 oz tequila

Prosecco to top

Pitcher:

2 cups cranberry juice

1/2 cup lime juice

1 1/2 cup tequilla

1 750 ml bottle prosecco

Directions:

  1. In a large sauce pan, add water, cranberry, persimmons, jalapeño, and sugar. Bring to a simmer over medium heat. Lower heat and let simmer and reduce down to about half, about 30-45 minutes

  2. Let juice cool and strain into an airtight container. Store in the refrigerator for up to 5 days.

  3. Right before serving, combine ingredients in single serve or a pitcher.

  4. Serve over ice.

  5. Enjoy!
