Sausage, Egg, and Cheese Biscuit Casserole

In my family, we have had the same breakfast casserole every Christmas morning I can remember and it’s one of my absolute faves. However, it’s also a recipe that’s all over the internet already so I decided to give you guys something different. This casserole is perfect for the chaos that Christmas morning brings because you can make it the night before. Pop it in the oven while the kids are tearing open presents and it’s ready in no time! It’s basically a breakfast sandwich in a dish and it’s so good!

Entertaining tips:

  1. Make the sausage up to 2 days before and store in a container in the fridge.

  2. Assemble this casserole the day before. Cover it with plastic wrap and put in the fridge. When you wake up, pop it in the oven.

Ingredients:

1 lb breakfast sausage

5 uncooked biscuits, any pre-made tube of biscuits will work.

8 large eggs

2 cups grated gruyere cheese

4 Tbsp melted butter

1 Tbsp fresh rosemary, chopped

1 tsp baking powder

1/4 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

DIRECTIONS:

  1. Preheat oven to 350 degrees.

  2. Spray a 11x7.5” baking dish with non-stick spray and set aside.

  3. In a large fry pan, brown the breakfast sausage over medium heat until cooked through. Remove from heat to cool and set aside.

  4. While the sausage is cooling add the eggs, butter, rosemary, onion powder, baking powder, salt, and pepper to a large bowl and whisk to combine.

  5. Add the cheese and sausage and stir to combine.

  6. Pour mixture into baking dish.

  7. Cut biscuits into quarters and top the egg mixture with them, pushing them down into the mixture.

  8. Cover dish with tin foil and bake for 20 minutes.

  9. Remove tin foil and bake for another 15 minutes.

  10. Serve warm and enjoy!
