S’mores Cookies
Everyone is in baking mode these days, even those that don’t usually bake. There’s something comforting about being in the kitchen, oven warming, and carbs baking. As I’ve stated before, I am a new-ish baker. And there is nothing like a quarantine to take the time to learn something new.
I have 2 toddlers so baking cookies is a good way to entertain them for all of 10 minutes. If you have toddlers, you know 10 minutes of entertainment is pure gold! So, I’ve been baking a lot. Perfecting cookie, bread, and brownie recipes (more to come). These s’more cookies are just that. PERFECT! They are gooey, chocolatey, a touch of salt, and the marshmallow melts into this crispy caramel goodness on the bottom of the cookie. There’s literally nothing not to love about this cookie. It’s also super easy and super quick. Like I said, perfect! Go to your kitchen and make this cookie now!
Recipe
Ingredients:
1 and 1/2 sticks of butter at room temperature (12 Tbsp)
1/2 cup granulated sugar
1 cup brown sugar
1 tsp vanilla extract
2 eggs
1/2 tsp salt
1/2 tsp baking powder
2 cups all purpose flour
1 cup semi-sweet chocolate chips
1 and 1/2 cup marshmallows
3 sheets of graham cracker
Flake salt
To make:
Pre-heat oven goes 350 degrees.
With an electric or stand mixer, cream together sugar and butter. Add eggs and vanilla and mix until combine and smooth.
Slowly add flour, baking powder, and salt, and stir to combine.
Add semi-sweet chocolate chips and 1 cup of mini marshamallows and stir to combine using a spatula. Set dough aside
Lightly grease or line your baking sheet with parchment paper
In a bowl, roughly crumble the graham crackers and set aside.
Using an ice cream scoop or spoon, scoop a golf ball sized of dough dip the top into the graham crackers, then place the dough on the cookie sheet. Make sure they are 3” apart, they will expand when they bake.
Add 3-4 marshmallows to the top of the dough and sprinkle with flake salt.
Bake for 12-15 minutes.
*Pro-tip: These cookies will rise a bit, if you want them a little more flat, take the baking sheet out of the oven after 10 minutes and gently bang on the counter, then place back in the oven to finish cooking.
These cookies are going to appear slightly undercooked which is good. They willl finish cooking outside of the oven and you want them soft and gooey!
Transfer from baking sheet to rack and let cool for 15-20 minutes.
