Peach, Goat Cheese, and Truffle Salad
I’ve mentioned before that I usually try to outsource the “something green” part of the menu. I find my friends are usually better at providing the “healthy” portion of the evening, but every once in a while I create a simply delicious salad and this is one of those times. This salad is perfect for late summer/fall and even more perfect to go along side my 2 favorite things… cheese and carbs. The truffle in this salad is super light and subtle which compliments the fruit perfectly. This is also a perfect brunch salad so you can put this one in your “something green” rotation;) I hope you enjoy!
Recipe: serves 4-6
Ingredients:
5 oz arugula
2 peaches, thinly sliced, pit removed (any stone fruit will work with this)
4oz of goat cheese
1/2 cup salted macadamia nuts, crushed (you could also use marcona almonds)
1/2 cup golden raisins
1/4 cup olive oil
1/4 cup white wine vinegar
1/4-1/2 tsp truffle oil (depending on preference)
2 Tbsp fresh orange juice
1 Tbsp agave
Salt and pepper to taste
To make:
Add arugula, peaches, goat cheese, nuts, and raisins to a large bowl and set aside.
In a small bowl add olive oil, vinegar, truffle oil, orange juice, agave, salt, and pepper. Whisk to combine.
Pour dressing over salad and toss.
Serve and enjoy!
