Celebration Cookies

It’s the unofficial start of summer and with states starting to open up again there is definitely something to celebrate! Even though we are slowly opening up I know a lot of people are still being cautious, spending a lot of time at home, and continuing to bake. So, these cookies felt like the perfect recipe. They are buttery, sweet, chewy, and so so good! Make them and take some time to celebrate whatever’s good with you!

Recipe: makes 12 large cookies

Ingredients:

1 1/2 sticks unsalted butter at room temperature

1/2 cup brown sugar

1/2 cup granulated sugar

2 eggs

1 tsp vanilla

2 cups all purpose flour

1/2 tsp salt

1 cup white chocolate chips

1/2 cup colored sprinkles

To make:

Pre-heat oven to 350 degrees.

Line 2 baking sheets with parchment paper and set aside.

In a large bowl add the butter and sugar. Using an electric mixer, mix until combined.

Add eggs and vanilla and whisk until smooth.

Slowly add flour and salt and continue to whisk until combined.

Add white chocololate and sprinkles to mixture, using a spatula fold into batter until combined.

Using an ice cream scoop, scoop batter and place on baking sheet. These cookies are large, so limit 6 cookies per baking sheet.

Place baking sheets in oven and cook for 10 minutes. After 10 minutes, remove baking sheets and bang against the counter a couple times to release the air in the cookies and flatten them out. Bake another 5-10 minutes until golden around the edges. They will still seem very soft in the middle.

Let cookies cool on a baking rack for at least 15 minutes.
