Caprese Bruschetta

Hi Everyone! Let’s talk Caprese Salad. I love Caprese Salad. Mainly because it is not as much of a salad as it is cheese which, as I have mentioned before, is my favorite food group. To be honest, for the longest time I wouldn’t eat fresh tomatoes. I tried but I just did not like them. Then I learned that it was really the juice and seeds that I didn't like but I really enjoyed the meat of the tomato. Then I started to explore tomatoes more and realized there are a few varieties that I do like. Heirloom is at the top of my list. Bonus, they are so pretty! Now they are my go to tomato when making fresh dishes.

This dish takes the fresh ingredients of a caprese salad and combines it with a crusty, chewy baguette. What’s not to love about that?! It is so good! When I made this dish for my family everyone was fighting over the last one. It is that good! Pair this with my Cacio e Pepe for a to die for dinner. Ask your friends to bring a salad and a dessert and your party is complete. And so easy!

Recipe

Serves 8

Ingredients:

1 French baguette

2 heirloom tomatoes

1 cup ricotta cheese

1/2 cup balsamic vinegar

1/4 cup extra virgin olive oil

1/8 cup chopped fresh basil

1 tsp flake salt

To make:

Cut baguette into 1 inch thick slices

Brush both sides of each slice with olive oil followed by balsamic

Place on baking sheet and bake for 5 minutes.

Flip and bake another 5 minutes

Remove from oven and let cool.

While cooling slice tomatoes very thin, about 1/8-1/4” thick

Once cooled generously spread each slice with ricotta cheese

Top with sliced tomatoes

Place basil over top and sprinkle with flake salt

Enjoy!
