Creamy Brie Macaroni and Cheese
Macaroni and Cheese is one of my favorite dishes. I don’t discriminate when it comes to pasta and cheese either. As much as I love a creamy pasta made with quality ingredients, I will absolutely eat a box of Mac and cheese if available. When I make my kids box mac and cheese, I always sneak a couple bites. Always! It’s just good and I can’t deny it!
Macoroni and cheese is my go to comfort food. I always seem to crave it when I’m sick and the creamier the better. I wanted to recreate the star dish into something that my kids would eat but I'm also proud to serve to my friends. Enter my Creamy Brie Macaroni and Cheese. This dish is so creamy and flavorful and the combination of brie and mascarpone makes it beyond. This is one recipe you will go to over and over again.
Now, I feel pretty strongly about the type of pasta I use in different dishes and for this dish, it has to be cavatappi pasta. To me, it is the go to cheesy dish pasta. The holes and the twisting grooves soak up all the cheesy goodness making each bite 100% perfect. Of course, you can use elbow or any short cut you like but if find it at your local store, I strongly encourage cavatappi.
Recipe
Ingredients:
1 wedge of brie, sliced into 1/2” thick slices
2 cups shredded fontina cheese
8oz mascarpone cheese
1 cup whole milk
1 pound cavatappi pasta
1 tsp salt
1/2 cup panko bread crumbs
3 Tbsp butter, melted
To make:
Bring a large pot of water to a boil and generously season water with salt.
Once water is boiling, add pasta. Cook until al dente. Follow box instructions for time, this is usually about 7-8 minutes
While pasta is cooking, combine melted butter, bread crumbs and 1/4 tsp salt in a small bowl. Set aside.
Once pasta reaches al dente, drain pasta and pour cooked pasta back into pot.
Add mascarpone, milk and 3/4 tsp salt to pasta. Stir to combine.
Once combined add the fontina cheese and stir to combine.
Spray a large oven safe dish with non-stick and pour cooked pasta into dish.
Pour pasta mixture into baking dish.
Take the sliced brie and stick throughout the pasta.
Top with breadcrumb mixture and place dish in the oven.
Cook for 10 minutes or until golden brown on top and bubbling around the sides.
Remove from oven and serve warm straight from baking dish.
