White Christmas Mimosa

A mimosa on Christmas morning is a must in my mind. But not just any plain orange mimosa. Why not make it a festive mimosa. This cocktail is as easy as an OJ mimosa but so much better! And so much more festive! Let’s be honest, this year we’re all gonna need a few mimosas to get through Christmas!

Entertaining tips:

  1. Make the cinnamon simple syrup up to 3 weeks ahead of time. You’ll have extra so you can store it in an jar for up to 3 months and use it for other cocktails, tea, coffee, whatever!

  2. If you have a group, make a pitcher. If you’re by yourself, make a pitcher ;)

Recipe:serves 4-6

INGREDIENTS:

For the cinnamon simple syrup:

1 cup water

1/2 cup sugar

5 cinnamon sticks

1 Tbsp whole cloves

For the cocktail:

Singer serve:

1 oz coconut milk

1/2 tsp cinnamon simple syrup

Prosecco to top

Pitcher:

1 cup coconut milk (shaken well to combine)

2 Tbsp cinnamon simple syrup

1 750 ml bottle Prosecco

Directions:

  1. Make the simple syrup. In a small sauce pan, bring water to a boil. Once boiling, add sugar and turn down to a simmer. Add cinnamon sticks and cloves and stir until sugar is dissolved. Simmer for another 10 minutes and then remove from heat. Allow to cool and then strain and transfer to an airtight container. You can store this in the refrigerator for up to 3 months.

  2. Right before serving, combine ingredients in single serve or a pitcher.

  3. Enjoy!
