Strawberry Shortcake Ice Box Cake
Do you remember what your go-to frozen treat was when the ice cream truck came down your street as a kid?! Well, mine was the strawberry shortcake ice cream bar. It was simply perfection!
During our 5 week road trip, we stopped by a park so the girls could get out and run around a bit and our timing couldn’t have been more perfect. As we parked the car, an ice cream truck pulled up. May not sound that exciting but living in LA, we pretty much never see an ice cream truck so it was a first for the girls. Anyways, as our girls were overwhelmed with the decision of what to choose I knew exactly what I wanted.
After that I decided I had to recreate my favorite summer treat and, to be honest, it’s just as good if not better than I remember. This is the perfect dessert to beat the summer heat with.
Recipe
Ingredients:
1.5 quarts strawberry ice cream
1/2 cup strawberry jam
12 strawberries, sliced
5 cups vanilla wafers, crushed
4 Tbsp salted butter, melted
To make:
Let ice cream sit at room temperature for about 20-30 minutes. This will make it easier to work with.
While the ice cream is softening add strawberry Jam to medium bowl and mix in about 2-3 Tbsp of water to thin out the jam. You want the jam thin enough so you can drizzle it. Set aside.
In a medium bowl, combine melted butter and crushed vanilla wafers.
Scoop half the ice cream into a 8” square baking dish and spread out to an even layer covering the entire dish. *Any freezer safe dish will really work but depending the size you may have more or less layers.
Add half the sliced strawberries on top of the ice cream.
Drizzle half the jam on top of the strawberries.
Add half the crushed vanilla wafers.
Repeat the steps starting with adding the strawberry ice cream on top of the vanilla wafers.
Once completed layering all the ingredients, cover and place in the freezer for at least 2 hours to let set.
Garnish with more strawberries and cut to serve.
