Quarantine Coffee
Happy Cocktail Thursday! I’m getting on this Dalgona Coffee trend but making it so much better by creating a cocktail out of it. Let’s be honest, when you wake up, and every day is looking to be the same, you’re faced with the tough choice of coffee or cocktail. Well, here you go. No more tough decisions. This cocktail is everything you need during these crazy times. Bonus, it’s a little “tropical” feeling so if you close your eyes you can imagine you are on beach somewhere enjoying this drink. Whatever you gotta do to get through, right?! If you like coffee, make this! You won’t be disappointed.
Recipe
Ingredients:
2 Tbsp Instant Coffee
1 Tbsp Sugar
2 Tbsp Hot Water
2 Tbsp Coconut Cream*
4 oz coconut milk*
2 oz Tequila
1 oz Coffee Liquor
1/8 tsp cinnamon plus more for topping
Serves 2
To make:
In a small bowl, add coffee, sugar and hot water. Using an electric mixer, mix on high for 3-5 minutes or until thick and whipped.
In a cocktail shaker, add coconut cream*, coconut milk*, tequila, and 1/8 tsp of cinnamon. Shake well to combine.
*Use a 15oz can of coconut milk. Scoop 2 Tbsp of the cream off the top and pour 4 oz of milk into shaker. You can store the rest in an airtight container in the fridge for a future use.
Fill 2 glasses with ice and pour coconut mixture over ice, splitting evenly between 2 glasses.
Pour 1/2 oz coffee liquor over each drink.
Top with whipped coffee and a dash of cinnamon.
Stir and enjoy!
