Lavender Goat Cheese Biscuits
Biscuits are most definitely in my top 5 favorite foods and I’d say they’re my #1 favorite breakfast food. It doesn’t matter if it’s Biscuits or a homemade biscuit with jam, if it’s on the menu, I’m eating it. All that being said, I take biscuits pretty seriously so when I set out to create a homemade biscuit recipe I knew it was going to take some time. Multiple recipe testing later, I feel pretty confident that I nailed it. These biscuits are fluffy and so flakey at the same time. Bonus, they’re easy to make! The addition of lavender goat cheese is subtle but makes them extra special. I promise you, you will not be disappointed in this recipe.
Entertaining tips:
Prepare the biscuits the morning of but don’t bake. Place the biscuits on a baking sheet and store in the fridge until ready to bake. Then just take them out and pop them in the oven.
Make any of these along side for the perfect menu.
Recipe
Makes 10-12 Biscuits
Ingredients:
3 cups all purpose flour
2 Tbsp Baking Powder
16 Tbsp (2 sticks) cold unsalted butter
1 1/4 cup cold buttermilk + 1 Tbsp
4 oz cold Cypress Grove Purple Haze cheese
1/2 Tbsp flake salt
Directions:
Preheat oven to 350 degrees
Line a baking sheet with parchment paper and set aside.
In a large bowl combine flour, baking powder, and salt.
Cuter 12 Tbsp butter into small cubes and add to the dry ingredients.
Using a pastry cutter, or back of a fork, cut butter into the flour, breaking the butter and mixing at the same time. The flour will still be dry with pebbles of butter throughout.
Add 1 1/4 cup of the buttermilk and stir until just combine. Careful not to over stir.
Sprinkle flour onto a clean cold surface and pour the flour mixture onto the surface. Use your hands to form into a disc shape.
Using a rolling pin, roll dough out to 1” thick.
Slice the remaining 4 Tbsp of butter into 6-8 slices and place the butter on 1/2 of the dough.
Break apart goat cheese and and sprinkle over the same side of the dough as the butter.
Fold the other half of the dough over the butter and cheese and roll dough out to 1” thick.
Repeat step 11 3 more times to create layers of goat cheese and butter.
Using a biscuit cutter or knife, cut out biscuits and place on lined baking sheet.
Brush the top of the biscuits with remaining 1 Tbsp of buttermilk and sprinkle with flake salt.
Bake for 20-25 minutes, until golden on top.
Serve warm.
