Chipotle Pork Sliders

Summer has unofficially ended but the heat hasn’t so while you may be over grilling, you definitely don’t want to turn on the oven. Enter these sliders. These sliders are the perfect hybrid of summer and fall! They have a sweet tang of bbq sauce with a smoky flavor that screams fall. These delicious bites go perfectly with my cotija slaw - serve as a side or on top of the pork.

Entertaining Tips:

  1. Make the sauce the day before. Make sure the pork is in the instant pot before the guests arrive. Then all you need to do is shred the pork and toss with sauce over before serving.

  2. Prep the rolls and cheese before hand. Cut the rolls in half and store in an air tight bag or container. Crumble the cotija cheese and store in air tight container in the refrigerator.

Recipe

Ingredients:

3-4 pound pork shoulder

2 Tbsp olive oil

2 Tbsp coarse sea salt

1 tsp ground black pepper

1 pack of sweet Hawaiian dinner rolls

4 Tbsp butter

4 garlic cloves, finely chopped

2 chipotle peppers in adobo, finely chopped

1 Tbsp sauce from chipotle peppers in adobo

4 Tbsp chili sauce

1 tsp dried oregano

1 tsp dried basil

1 tsp liquid smoke

1/2 cup cotija cheese, crumbled.

To make:

Cut pork shoulder into 4-5 large pieces. Season the salt and pepper.

In an instant pot, turn to sauté and add olive oil. Once hot add the pork, a few pieces at the time so you have enough space for them to brown.

Flip to brown all sides. Continue with the remaining pieces.

Once finished browning, add all pork back to instant pot along with 1/2 cup water

Secure instant pot lid and set to high pressure for 90 minutes.

While pork is cooking, place a small sauce pan over medium heat.

Add butter and let melt. Add garlic to melted butter and cook for 1-2 minutes, just to soften.

Add chipotle peppers and sauce, chili sauce, oregano, basil, and liquid smoke. Simmer on low for 10 minutes.

Remove sauce from heat and set aside.

Once the pork is done cooking, switch pressure valve to quick release. Make sure all pressure has been released before opening.

Shred pork in pot with forks and drain the extra liquids.

Pour chipotle sauce over shredded pork and toss to combine.

Finally, assemble the sandwiches. To do so, cut the rolls in half and top with shredded pork. Sprinkle cotija cheese over top and place the other half of the roll on top. Do this with all the rolls.
