Blueberry Lime Galette

Sunday is Mother’s Day and I figured just because we’re in the midst of social distancing doesn’t mean the day should be forgotten. Since Mother’s Day is typically a big “go to mom’s favorite brunch spot” type of holiday and most restaurants are closed for dine-in, I wanted to provide you recipes for an at home meal that anyone can make so mom can relax. Something equally easy and delicious. This Blueberry Galette is just that. The sweetness from the blueberries combined with the citrus from the lime and the buttery crusty goodness that is pie crust makes this the perfect brunch addition.

Serve this after my Brunch Board for the perfect mid-morning meal. Best part about this whole menu is you can snack on it all day. Trust me, it may look like a lot of food but all these foods are sure to be devoured.

Recipe

Ingredients:

Store bought or homemade pie dough

12 oz fresh blueberries

1 tsp lime zest

1 Tbsp fresh lime juice

1 Tbsp flour

2 Tbsp granulated sugar

1 tsp vanilla

1 egg

To make:

Pre-heat oven to 400 degrees

In a medium bowl, add blueberries, lime zest, lime juice, flour, sugar, and vanilla. Stir to combine. Set bowl aside.

Lightly flour a flat surface and place pie dough on top. Using a rolling pin, roll pie dough out to a circle about 1/4” thick.

Line a baking sheet with parchment paper or silpat and place pie dough on top.

Spread blueberry mixture on pie dough leaving about 1-2” of dough around.

Pull the sides up over the blueberries to create a crust to hold everything in.

In a small bowl, whisk together 1 egg and 1 Tbsp water. Brush crust with egg wash and sprinkle with sugar.

Bake for 35-45 minutes until the crust is golden and the blueberries are bubbling.

Remove from oven and let rest for at least 30 minutes before serving.
