Jalapeno Popper Pigs in a Blanket

Pigs in a blanket are easily one of my favorite game day grubs as are jalapeño poppers wrapped in bacon. When I was debating on which one to make for Super Bowl this year, the answer was obvious. Combine them! I’m that person that wants to try everything on the menu. You know those chain restaurant sample platters?? I think every restaurant should have those! Anyways, whenever I create a recipe I always think about how I can pack more of what I love into 1 dish. And that is how these lil’ guys were born. They’re the most wonderful love child of pigs in a blanket and jalapeño poppers. Don’t question it, just make them!

Entertaining tips:

  1. Build the pigs in a blanket the morning of and put on the baking sheet. Wrap the baking sheet in plastic wrap and store in the fridge. Remove plastic wrap and bake right before everyone arrives.

Recipe:Makes 24 piggies

Ingredients:

12 oz package of lil’ smokies

4oz room temperature cream cheese

1 cup shredded sharp cheddar cheese

1/4 tsp paprika

1 jalapeno

1 can crescent rolls

  1. Pre-heat oven to 375 degrees

  2. Line a baking sheet with parchment paper and set aside.

  3. In a medium bowl, mix together the cream cheese, cheddar cheese, and paprika. Set aside.

  4. Slice jalapeño in half and remove seeds. Slice the jalapeño lengthwise, into 12 strips. Once sliced, cut the strips in half. You want 24 pieces of Jalapeño.

  5. Open crescent rolls and roll out dough.

  6. The dough Combes in 4 rectangles, sliced diagonally to form 8 triangles. Dividde the 4 rectangles and pinch together the diagonal cut to form a rectangle in 1 piece.

  7. Slice the rectangle into 3 equal pieces (3 squares).

  8. Slice each square diagonally to form smaller triangles (refer to picture on right).

  9. Spoon 1 Tbsp cream cheese mixture on top of the largest side of the triangle.

  10. Place 1 jalapeño slice on top of cheese.

  11. Top with a lil’ smoky.

  12. Roll smoky up in the dough and place on lined baking sheet.

  13. Repeat steps 7-12 until you’ve used all the dough.

  14. Bake for 12-15 minutes, until golden brown.

  15. Serve warm and enjoy.
